Xinomavro means “sour black” and is a grape that doesn’t usually do delicate, but Apostolos makes it look easy. Grapes picked specifically for rosé, 12 hours on the skins, fermented with native yeasts and aged four months in large used oak for creaminess without oak flavour. The result is salmon-hued with dried cranberry, blood orange and wild strawberry, backed by that characteristic nip of tannin that makes it a seriously food-friendly pour. An adventurous pairing with Korean galbi or a Vietnamese bun bo hue.

Description

Apostolos grew up riding his motorbike around the family vineyards in northern Greece’s Naoussa, and never really stopped. After studying oenology in Athens he came home to take the family’s grapes out of the local cooperative and into something entirely his own. Now biodynamic across all 42 hectares and widely credited with putting Xinomavro, Greece’s answer to Nebbiolo, on the world map.
