A field blend of Pinot Noir, Pinot Gris and Gewurztraminer from 40-year-old organic vines in the Baw Baw Shire, each variety handled differently before coming together in old oak. The Pinot Gris spends a month on skins, the Gewurz goes straight to barrel, the result landing somewhere between a very light red and a very serious rosé. Raspberry, spice and forest floor, with a purity that earns its name. A unique and idiosyncratic wine that goes nicely with Japanese chicken karaage or a bowl of tonkotsu.

Description

A farmer first and winemaker second, Patrick Sullivan grew up in rural Victoria with agriculture in his blood. His biodynamic farm in the Strzelecki Ranges of Gippsland sits on ancient red volcanic soils over sandstone, and every wine he makes is an honest expression of that place. Minimal intervention, wild ferments, no fuss.
