Predappio has a strong claim to being Sangiovese’s original home, with a distinctive local clone grown on spungone, a porous fossil-rich calcareous sandstone from the Apennine foothills. Organic, 100% Sangiovese, fermented naturally, aged in large neutral vessels. Red cherry, pomegranate, tomato leaf, wild herbs and a saline mineral edge, with silky tannins and vibrant freshness. Brilliant with Thai gai yang and Japanese duck soba.

Description

Raised in a winemaking family in Predappio but headed for a career in economics, Chiara changed course in 2015, buying vineyards a neighbour was about to rip out. Inspired by 1930s bottles of her grandfather’s garage Sangiovese, she set out to resurrect Predappio’s ancient style: open-top fermenters, extended maceration, native yeasts, large old oak. In a decade she has become one of Italy’s most talked-about young winemakers.
