Dernier Souffle means “last breath,” named after the vineyard’s location right beside the village cemetery in Romanèche-Thorins. Morbid name aside, 60-year-old Gamay vines on decomposed granite produce anything but a dying wine. Semi-carbonic maceration followed by eight months in used oak gives dark cherry, kirsch, rose petal and a saline mineral edge that makes it feel more Burgundy than Beaujolais. A jovial and elegant pairing with celebratory dishes like Peking duck or a plate of char siu pork.

Description

Originally from Chablis, Richard Rottiers followed his heart to Moulin-à-Vent in 2007, drawn by the potential of Gamay grown on granite. Working with old vines between 40 and 80 years old across five organic hectares, his wines consistently punch well above their Beaujolais postcode.
