Equal parts Vermentino, Fiano and Zibibbo sourced from organic vineyards in South Australia, each variety spending time fermenting on its skins before a gentle press and ageing in stainless and neutral oak. The result is a hazy, aromatic pour packed with mandarin, peach and a little white tea, with just enough texture to keep things interesting. A thirst quencher to go with a spicy plate of som tam or firey larb.

Description

The playful side project of old friends and acclaimed Gippsland winemakers Patrick Sullivan and Xavier Goodridge, who met at 18 and never really stopped having fun together. Sourcing biodynamic and organic fruit from across Australia, this is the kind of project where the rules are minimal and the wines are built purely around deliciousness.
