A Parisian biologist who traded the lab for a tiny cellar in the Ardèche hills after a life-changing encounter with Marcel Lapierre’s wines. Working old vines of Roussanne, Viognier, Syrah and Gamay vines on steep granite slopes, Hervé makes wines with minimal intervention and no certification, just a deep knowledge of his terroir and a preference for precision over power.
