De la Finca Extra Brut

De la Finca comes from a plot of old vine grape varieties known as Xarel-lo, Macabeu, and Parellada, the three most classic grapes of Catalan sparkling wines. The vineyard is called Vinya dels Fossils and as you can imagine it’s filled with chalk, limestone, and ancient fossilized marine life making for fantastically mineral wine. The wine is then aged for 3 years on the lees before it’s disgorged. Roasty flavors of Pan de Miel and Buttercream balanced with bright citrus notes of Yuzu, Lemon, and Pomelo.
